Rosé Enthusiast: Meet Ariel Arce

In the world of bubbly, Ariel Arce is probably the coolest one to watch. This native New Yorker, who cut her teeth at Chicago’s Pops for Champagne and The Office at the Aviary, has created a fresh 1920’s-inspired Greenwich Village space with Air’s Champagne Parlor. She’s a woman after our own hearts, who often wears lip prints (the logo for Air’s), while serving up an unexpected array of sparkling wine as David Bowie blasts from the speakers. We’re delighted the current cover girl of Wine Enthusiast’s 40 under 40 issue is also our latest Rosé Enthusiast!

What was the bottle that made you fall in love with Champagne? It was the first bottle of Rosé I bought for myself from Marguet, a Champagne producer in Ambonnay. I was intrigued prior, but it solidified to me the magic of the wine and how little I knew about it.

What are the most essential pink sparklers for Rosé lovers to try? Essentials are hard because there is such good Rosé sparkling. Really it comes down to what you like. I focus on Champagne and within that there are a range of styles. For Chardonnay focused I like de Sousa, which is light and floral. For Pinot Noir I go to Eric Rodez, which was the old winemaker for Krug and who knows how to find finesse and elegance with Pinot. For the unique and bold I love Bereche et Fils Campagne Reminis, which is aged on cork and has a soft velvety character that I will describe as lying naked on a bear skin rug while a chenille blanket is slowly pulled down your body. 

What are your go-to songs when popping bottles? Music and wine is all about how you’re feeling. If relaxing I want a little Patsy Cline and Willie & Waylon. If we are getting started, some Ray Charles, Stevie Wonder and Aretha Franklin. And disco and funk is always great. 

What is your favorite rosé bubbly and holiday food pairing? H. Billiot Rosé, a blend of mostly pinot with a little chardonnay and tastes like raspberries and tangerines kills with ham or pork. Something with a lot of fat and flavor and salt.
