Yes Way Diaré: Air’s Champagne Parlor
After still French Rosé, sparkling wine is our second greatest love. Popping bottles is always a beautiful thing, but when it’s PINK and FIZZY it’s taken to the next level. A few years ago we discovered that bubbles don’t need to be reserved for special occasions and it changed our perspective on parings and when to enjoy it. This is why the high-low vibe at Air’s, Ariel Arce’s Greenwich Village champagne parlor, speaks to us so much. First, the music is incredible and nothing really matters when Talking Heads and Tears for Fears are playing. You could leave happy because of the jams alone, but this is a well thought out experience from start to finish.
The wine menu is an incredibly informative and fun pocket-sized book with everything you need to know about bubbly, i.e. Champagne for Dummies. Arce clearly knows how and does her best to make ordering not intimidating. We shared a flight of three Rosés sparklers -duh- with Paul Clouet Brut Rosé Champagne, Filipa Pato Extra Bruto Rosé from Portugal, and Champagne de Sousa Brut Rosé. Each had a unique flavor profile and were pure delights, however, the Paul Clouet was the standout. After a long day each smooth sip was an instant happy explosion. For food we skipped the Caviar and opted for grilled cheese with lavender honey and french fries served with truffle aioli. While there we were already plotting who we should take there on our next visit.
Shimmying to good tunes, beautiful bubbles, and french fries is definitely a recipe for a good time. Go and pop ’til you drop!
